Hmmm, I've never felt the need to put winches on my boat. It's a smaller vessal, and my arm strength has always worked just fine. Well, if you have smaller winches, I might be interested, though I'd have to think it through, as I tend to prefer sitting on the spot where the winches are supposed to be, if added.
Anyway, as for the sails: put them up for sail on sailing sites, ebay, whatever. You won't get much for them (perhaps), but something is better than nothing. And if you're not interested in dealing with selling them, give them to someone who can use them, or donate them to the Milwaukee Community Sailing Center.
As for all of your hardware (including winches): this is not advice, but what I'd do, is strip EVERYTHING off the boat. Who knows, you might need some, or all of it, on your next one. Hmm, actually might not hurt to hold on to the sails, either, as they might be better off than your next 'new' boat, and could be used.
But I would strip everything. Wire ropes, deck cleats, cam cleats, clam cleats, anchor, chain, windex... tiller?... you name it. Could probably even sell the port 'glass, as there's dedicated sites for your boat. Maybe I'd even post on that site what occured, ask what, if anything, anyone would need.
